They were fantastic! The grilled pineapple was undoubtably the best feature! Josh loved them... and that is saying a lot because he doesn't find too many "healthy" foods delicious. My dad said they were good, but they were healthy so they could have been better, lol.
Anyway, I highly recommend them.
Here are the things I would change:
1. The layering process: I would layer cheese so that it touches both the top and bottom tortilla. Without some on top to act as "glue," the top tortilla just kinda slides around.
2. Using a hawaiian teriyaki marinade on the chicken kicked it up a notch and was awesome.
3. A little more cheese than recommended. I do like a gooey quesadilla... of course not too gooey, can't add up the calories too much.
So, definitely give them a try. Enjoy!
